I'm so tired of people making "cookie dough" that "tastes just like the real thing" when it absolutely does not. It tastes like peanut butter Greek yogurt with chocolate chips. So I made my own version, and I can confidently say, I can't tell the difference.
I'm actually eating this as I write this blog because I wanted to make sure I didn't get the recipe wrong. I didn't. It's delicious. It’s soft, satisfying, naturally sweetened, and packed with protein (without the crash that comes from traditional desserts).

Collagen Cookie Dough
Ingredients
1/4 cup gluten-free oat flour
1/4 cup collagen peptides
2 tablespoons sweetener (I use this stevia)
1/2 teaspoon molasses (unless using brown sugar as your sweetener)
1 tablespoon salted butter, softened (I love Kerrygold)
Pinch of salt
Dash of vanilla extract
Tiny splash of almond milk (if needed)
1 tablespoon chocolate chips (I use stevia-sweetened)
Instructions
In a small bowl, cream together the softened butter and sweetener using a fork until smooth and slightly fluffy.
Add in the vanilla extract, molasses, and pinch of salt, mixing until combined.
Stir in the collagen peptides and oat flour, mixing thoroughly until a dough forms.
If the dough feels too dry, add a tiny splash of almond milk (just enough to bring it together).
Fold in the chocolate chips.
Enjoy immediately or chill for a thicker, more dough-like texture.
